Variety
The wine is made exclusively from the Melon de Bourgogne grape variety, a white grape native to the Loire Valley.
Production
After harvest, the grapes are gently pressed and fermented in stainless steel tanks to preserve freshness and fruit character. The wine is then aged on its lees ("sur lie") through the winter and until bottling in the spring, which imparts additional complexity, texture, and a slight creaminess.
