Origin
Produced in the Saint-Chinian appellation, located in the Languedoc region of southern France. The vineyards benefit from a Mediterranean climate with warm, dry summers and mild winters, ideal for grape growing.
Variety
The wine is typically a blend of traditional Languedoc grape varieties, often including:
- Syrah
- Grenache
- Mourvèdre
Production
The grapes are harvested by hand and undergo traditional vinification methods. Fermentation takes place in temperature-controlled stainless steel tanks to preserve fruit character, followed by aging in oak barrels to develop complexity and structure. The vineyard’s schist soils impart a distinctive minerality to the wine.
Tasting notes
The ST CHINIAN MAS AU SCHISTE offers a deep ruby color with aromas of dark berries, black cherry, and subtle spicy notes. On the palate, it is medium to full-bodied with balanced tannins, a mineral backbone, and a long, elegant finish.
Food pairings
- Grilled red meats such as lamb or beef
- Hearty stews and casseroles
- Game dishes like wild boar or venison
- Mature cheeses, especially hard varieties
- Rich Mediterranean vegetable dishes
