Origin
Produced in the Valpolicella region, Veneto, Italy. Tommasi is a historic winery located in the heart of this renowned wine-producing area, known for its traditional Amarone wines.
Variety
The Amarone is typically made from a blend of native grape varieties:
- Corvina Veronese
- Rondinella
- Molinaro (sometimes included)
Production
Tommasi Amarone is produced using the traditional appassimento method, where grapes are harvested and then dried for several months to concentrate sugars and flavors before fermentation.
- Grapes are handpicked and carefully selected.
- Dried on racks in well-ventilated rooms for 3-4 months.
- Fermentation occurs slowly at controlled temperatures.
- Aging in large Slavonian oak casks and French oak barrels for 24 months or more.
Tasting notes
Tommasi Amarone exhibits a deep ruby red color with garnet highlights. The nose is rich and complex, featuring aromas of ripe dark cherries, plums, dried fruits, spices, and hints of vanilla and chocolate from oak aging.
On the palate, it is full-bodied and velvety with balanced acidity and firm tannins, offering flavors of black cherry, raisin, cocoa, and a long, persistent finish.
Food pairings
- Red meats such as braised beef or venison
- Game dishes
- Rich pasta with meat sauces
- Mature hard cheeses like Parmigiano-Reggiano or aged Pecorino
- Dark chocolate desserts (in moderation)
