Origin
Produced in the Beaune appellation, located in the Côte de Beaune subregion of Burgundy, France. This Premier Cru vineyard, Champs Pimont, is recognized for its high-quality terroir and traditional Burgundian viticulture.
Variety
100% Pinot Noir grape variety, typical of the Burgundy region and essential for producing elegant and complex red wines.
Production
The wine is crafted using traditional Burgundian winemaking techniques. Grapes are hand-harvested, followed by a careful sorting process. Fermentation occurs in temperature-controlled stainless steel or oak vats, with regular punch-downs to extract color and tannins. Aging is conducted in French oak barrels, a portion of which are new, for approximately 12 to 18 months to develop complexity and structure.
Tasting notes
- Appearance: Bright ruby red color with medium intensity.
- Aroma: Aromas of red berries such as cherry and raspberry, complemented by subtle floral notes and hints of earth and spice.
- Palate: Medium-bodied with silky tannins, balanced acidity, and flavors of red fruit, light oak, and a mineral finish typical of the Beaune terroir.
- Finish: Elegant and persistent with a refined structure.
Food pairings
Ideal to accompany classic French cuisine and dishes that complement its finesse and acidity, such as:
- Roasted duck or game birds
- Grilled or braised red meats
- Mushroom-based dishes and earthy flavors
- Soft and medium-aged cheeses like Brie or Camembert
