Origin
Produced in the Chablis appellation, located in the northernmost part of the Burgundy wine region in France. The vineyards benefit from a cool continental climate and Kimmeridgian limestone soils, which contribute to the distinctive minerality of the wine.
Variety
100% Chardonnay grape variety, the exclusive grape permitted in the Chablis AOC designation.
Production
The grapes are hand-harvested and carefully selected to ensure quality. Vinification is typically carried out in stainless steel tanks to preserve freshness and the characteristic mineral notes. The wine undergoes controlled fermentation at low temperatures and may be aged briefly on fine lees to enhance texture without imparting heavy oak influence.
Tasting notes
- Appearance: Pale straw yellow with greenish reflections.
- Aroma: Fresh and expressive with notes of green apple, citrus fruits, white flowers, and a pronounced mineral character typical of Chablis.
- Palate: Crisp and lively acidity balanced by subtle fruitiness; elegant and clean with a flinty, steely finish.
Food pairings
- Seafood dishes such as oysters, scallops, and grilled fish.
- Light poultry preparations and creamy chicken dishes.
- Fresh goat cheese and mild soft cheeses.
- Salads with citrus-based dressings.
