Origin
The Chablis 1er Cru Fourneaux by Poitout is produced in the Chablis region of Burgundy, France. This premier cru vineyard is located on the right bank of the Serein River, near the town of Chablis, renowned for its distinctive limestone-rich Kimmeridgian soils which impart a unique minerality to the wines.
Variety
This wine is made exclusively from 100% Chardonnay grapes, the traditional and only permitted grape variety for Chablis appellations.
Production
The grapes are hand-harvested to ensure optimal ripeness and quality. After gentle pressing, fermentation takes place in stainless steel tanks to preserve the fresh and mineral character typical of Chablis. The wine is aged on fine lees for several months to enhance texture and complexity without the influence of new oak, maintaining the crispness and purity of the fruit.
Tasting notes
- Appearance: Pale gold with greenish reflections.
- Aroma: Intense and fresh with notes of green apple, citrus zest, white flowers, and a pronounced flinty minerality.
- Palate: Crisp and vibrant acidity balanced by a subtle creamy texture, flavors of lemon, pear, and wet stone, with a long, mineral-driven finish.
Food pairings
Chablis 1er Cru Fourneaux is an excellent companion to a variety of dishes, particularly those that highlight its freshness and minerality:
- Seafood such as oysters, scallops, and grilled white fish
- Shellfish dishes including lobster and crab
- Light poultry preparations with lemon or herb sauces
- Soft cheeses like goat cheese or young Comté
- Asian cuisine with delicate flavors, such as sushi or steamed dumplings
