Origin
The Givry Bois Gautiers 1er Cru is produced in the Givry appellation, located in the Côte Chalonnaise subregion of Burgundy, France. This Premier Cru vineyard is known for its favorable terroir, combining limestone and clay soils which contribute to the wine's structure and finesse.
Variety
This wine is made exclusively from Pinot Noir grapes, the signature red grape variety of Burgundy, known for producing elegant and aromatic wines with good aging potential.
Production
The grapes are hand-harvested to ensure optimal ripeness and quality. Fermentation takes place in temperature-controlled stainless steel vats, followed by aging in French oak barrels, a portion of which are new, for approximately 12 to 18 months. This process enhances complexity and integrates subtle oak nuances while preserving the fruit character.
Tasting notes
The Givry Bois Gautiers 1er Cru displays a deep ruby color with garnet highlights. On the nose, it reveals aromas of red berries, cherry, and subtle floral notes, complemented by hints of spice and earthiness. The palate is medium-bodied with fine tannins, balanced acidity, and a lingering finish marked by minerality and delicate oak influence.
Food pairings
- Roasted or grilled poultry such as duck or chicken
- Game birds and light red meats
- Mushroom-based dishes and earthy vegetable preparations
- Soft to medium cheeses like Brie or Camembert
- Charcuterie and cured meats
