Origin
KISI is a traditional Georgian wine produced in the Kakheti region, known for its ancient winemaking heritage. The SHALAURI brand sources its Kisi grapes from selected vineyards in this area, emphasizing natural and indigenous methods.
Variety
The wine is made exclusively from the Kisi grape variety, an indigenous white grape native to Georgia. Kisi grapes are prized for their aromatic complexity and ability to produce wines with good structure and aging potential.
Production
SHALAURI Kisi is crafted using traditional Georgian qvevri winemaking techniques. The grapes are hand-harvested and fermented in large earthenware vessels buried underground, allowing natural fermentation with indigenous yeasts. The wine is aged on skins, which imparts a distinctive amber hue and complex tannic structure.
Tasting notes
- Appearance: Deep amber to golden color with slight haze due to skin contact.
- Aroma: Intense bouquet featuring notes of dried apricot, honey, wild herbs, and subtle floral hints.
- Palate: Full-bodied and textured with balanced acidity, flavors of ripe stone fruits, nuts, and a touch of spice. The finish is long and slightly tannic.
Food pairings
SHALAURI Kisi pairs excellently with a variety of dishes, including:
- Grilled white meats such as chicken or pork
- Rich seafood dishes like lobster or scallops
- Traditional Georgian cuisine including khachapuri and pkhali
- Soft cheeses and nut-based appetizers
