Origin
Corte Adami Ripasso DOC Superiore is produced in the Valpolicella region of Veneto, Italy. This area is renowned for its traditional red wines made from indigenous grape varieties and the unique Ripasso winemaking technique.
Variety
The wine is primarily made from a blend of native grape varieties typical of Valpolicella:
- Corvina Veronese
- Rondinella
- Molinaro
Production
The Ripasso technique involves refermenting Valpolicella wine on the lees of Amarone or Recioto grapes, which have been dried to concentrate sugars and flavors. This process enhances the wine’s complexity, body, and aromatic profile. The wine is then aged in oak barrels to develop structure and smooth tannins before bottling.
Tasting notes
Corte Adami Ripasso DOC Superiore displays a deep ruby red color with garnet reflections. The nose is rich and intense with aromas of ripe red fruits such as cherries and plums, complemented by hints of spices, vanilla, and subtle notes of dried herbs. On the palate, it is full-bodied and well-structured, with velvety tannins and a balanced acidity that provides freshness and longevity. The finish is persistent and elegant.
Food pairings
This wine pairs excellently with a variety of dishes, including:
- Roasted and grilled red meats
- Game dishes such as venison or wild boar
- Rich pasta dishes with meat-based sauces
- Mature cheeses like Parmigiano-Reggiano or aged Pecorino
- Hearty stews and mushroom risottos
