Origin
Produced in the Douro Valley, Portugal, a renowned region for Port wine production. Vallado is a historic estate located in this appellation, known for its traditional methods and high-quality fortified wines.
Variety
The 10 Year Old Tawny Port is typically a blend of traditional Douro grape varieties including:
- Touriga Nacional
- Touriga Franca
- Tinta Roriz (Tempranillo)
- Tinta Barroca
- Tinto Cão
Production
The wine is produced using traditional Port winemaking techniques. Grapes are hand-harvested and fermented with controlled temperature to preserve aromatic complexity. Fortification is done by adding grape spirit to stop fermentation, preserving natural sweetness. The wine is then aged for an average of 10 years in oak casks, allowing oxidative aging that develops the characteristic tawny color and complex nutty flavors.
Tasting notes
- Appearance: Deep amber with tawny hues, clear and bright.
- Aroma: Rich bouquet of dried fruits, nuts (almonds, walnuts), caramel, and subtle spice notes.
- Palate: Smooth and well-balanced with flavors of figs, raisins, toffee, and a gentle oak influence. Medium-bodied with a long, elegant finish.
- Sweetness: Medium sweet, typical of tawny ports.
Food pairings
Ideal to serve slightly chilled as a dessert wine or aperitif. Pairs excellently with:
- Nut-based desserts such as almond tart or walnut cake
- Dried fruit compotes and fig-based dishes
- Soft cheeses like blue cheese or aged goat cheese
- Chocolate desserts, especially dark chocolate
- Traditional Portuguese desserts such as Pastel de Nata
