Variety

Production
- Agave piñas are harvested and slow-roasted in earthen pits lined with volcanic rock, imparting a characteristic smoky aroma.
- After roasting, the agave is crushed traditionally using a tahona (stone mill) pulled by mule or horse.
- Fermentation occurs naturally in wooden vats with wild yeasts.
- Distillation is carried out in copper pot stills to refine the spirit while preserving its complex flavors.
