Production
Mala Mia Espadín Mezcal is produced using traditional artisanal methods:
- Agave hearts (piñas) are harvested after 7 to 10 years of growth.
- Piñas are slow-roasted in underground earthen pits lined with volcanic rocks, imparting a characteristic smoky flavor.
- After roasting, the agave is crushed using a tahona (stone wheel) pulled by mule or horse.
- The crushed agave is fermented naturally in wooden vats with wild yeasts.
- Distillation is carried out twice in copper pot stills to achieve purity and balance.
