This mezcal is made from 100% wild Tepeztate agave (Agave marmorata), a slow-growing and rare agave species known for its complex flavor profile.
Production
The agave hearts (piñas) are harvested by hand and roasted in earthen pits lined with volcanic rock, imparting a distinctive smoky character. The cooked agave is crushed using a traditional tahona (stone wheel) pulled by mule. Fermentation occurs naturally in wooden vats using wild yeasts, followed by distillation in copper pot stills. The process emphasizes artisanal methods to preserve the unique qualities of the Tepeztate agave.
