Cave Spring Cellars is located in the Niagara Peninsula, Ontario, Canada, a region renowned for its ideal climate and terroir for producing premium ice wines. The cool climate and cold winters allow grapes to naturally freeze on the vine, essential for authentic ice wine production.

The Riesling Ice Wine is made exclusively from Riesling grapes, a variety prized for its aromatic qualities, high acidity, and ability to produce balanced, sweet wines.

The grapes are hand-harvested in the early morning hours when temperatures drop to approximately -8°C (17.6°F) or lower, ensuring the grapes are naturally frozen. This freezing concentrates sugars and flavors. The frozen grapes are then pressed immediately, extracting a highly concentrated juice which is fermented slowly to preserve delicate aromatics and balance sweetness with acidity. The wine is aged briefly before bottling to maintain freshness and vibrancy.
